Marcie's Mexican Meatloaf

What you’ll need:

  • 1 lb. ground meat
  • 1 jar Leal’s salsa
  • ½ c. chopped onions
  • 1 tsp. Lawry’s season salt
  • 1 egg
  • Cracker crumbs or bread crumbs – enough to mold into a loaf to help it stick together. Approx. 1 ½ cups.

What you’ll do:

Mix all ingredients together in a large bowl. Bake for 45 minutes at 375. Top with favorite sauce and serve.

Fresh Avocado/Salsa Crostini Appetizers

What you’ll need:

  • 2 large Avocados (Mexican Grocery Stores have the best selection)
  • 1 c. finely chopped cilantro
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 bag of your favorite small toasted bread slices
  • 2 tsp. lemon juice

What you’ll do:

Mix all ingredients together in a large bowl. Bake for 45 minutes at 375. Top with favorite sauce and serve.

Cut up Avocado’s into a medium pieces. Mix in salt, pepper, cilantro & lemon juice. (trying not to puree your avocados) Scoop mixture onto bread slices, top with Leal’s salsa and serve for a delicious appetizer.

Black Bean Salsa

What you’ll need:

  • 1 16 oz. can black beans, rinsed and drained
  • 1-2 chipotles in adobo, finely chopped
  • 1 small, yellow bell pepper, small diced
  • ¼ cup finely minced red onion
  • ¼ cup cilantro leaves, chopped
  • Juice of 1 lime
  • ¼ teaspoon salt
  • ½ c. Leal’s salsa

What you’ll do:

Mix ingredients together and serve with Leal Tortilla Chips.

Christmas Meatballs

What you’ll need:

  • Homemade meatballs or a bag of frozen meatballs (your preference)
  • 1 can of jellied Cranberry Sauce by Ocean Spray
  • 1 jar of Leal’s salsa

What you’ll do:

In a crockpot, combine all ingredients and let cook for 3-4 hours. Serve on toothpicks at your next Christmas party – delicious!
